Do you need an easy recipe to feed your family? This honey mustard chicken recipe is fabulous and takes minutes to prepare. I received this recipe from a close family friend in my wedding shower recipe box gift. This person is virtually family to us, and I’ve always enjoyed her cooking. The only thing I’m disappointed about is that it took until now for me to try it for the first time. As a busy mom, I am always looking for simple recipes that take minutes to prepare. It takes longer to cook, but takes little effort from me. I also love to have meals that I can throw in the oven cooking for a while. The smell that entered the house as those pieces of chicken cooked up was amazing. When I decided to make this recipe, I decided to compare the prices of a whole chicken vs. a chicken that was already cut up. Although I know how to cut up an chicken, I figured the dollar I spent was worth it to save the time with a busy week ahead. If you want to save a little time on the recipe, that is the way to go. Other than that, it’s fast and easy. The sweet, juicy and yet perfectly flavored meat is a bit addictive. My husband got a large breast, and he did feel the flavor was lost a bit since the piece was so big, so he kept dipping his chicken in the leftover sauce at the bottom of the pan for the perfect bite. If I were to do it again, I’d probably just cut those large breasts in two. I am glad I get to share with you another easy, go-to mom recipe for you to add to your collection. A friend just had surgery, and I plan to take this to their family this week. It is a great meal to take someone else because they can just throw it in their own oven to cook and eat at their need.
Easy Honey Mustard Chicken
1/3 cup butter
1/2 cup liquid honey
1/4 cup Dijon mustard (you can use regular mustard also, we we love the Dijon)
3-4 tsp curry powder
1 whole chicken, cut up and skin removed (I kept skin on the wings)
Preheat oven to 375. Place butter in baking dish and place in oven until the butter melts. Mix together honey, mustard and curry, stirring to blend well. Roll chicken in mixture to coat all sides. Place in pan, meaty side down. Pour any extra marinade on top of chicken. Bake 45 minutes, basting occasionally. Turn chicken, and bake 15 minutes more.
