Are you looking for a new cookie recipe? This “Best Ever Cookie” recipe may be the answer. Now, are they really the “best ever” cookies? Honestly, I don’t think so. Are they good enough to be in the rotation? Yes. The cookies that I love more than this include our favorite chocolate chip cookies, the Rolo stuffed cookies, my S’More cookie bars and the Reese’s Chip chocolate cookies. Let’s travel back to these cookies. I received this recipe at one of my wedding showers. My mom and aunt had made me a Mod Podge recipe box and guests all brought their favorite recipes. This recipe was given to me by my fourth grade teacher who I also ended up doing my student teaching under at the end of my college experience. It was so fun to be back with one of my favorite teachers of all time. I don’t know if this was a title she made up for the cookies or if she adopted the recipe with this name, but there you have the “best ever cookies.” Now neither my husband nor myself are huge coconut fans, so I hadn’t made these yet. However, we were both surprised at how we didn’t even taste the coconut much and how we really enjoyed the cookies…especially the batter, but that’s always the case for me. I made a double batch for church, and I had so many cookies. I ended up freezing a bunch. I should have paid attention to how many dozen I got out of the batch. I would guess it was about 5 dozen or so. I’d love to hear your thoughts on these cookies.
“Best Ever Cookies”
1 cup white sugar
1 cup brown sugar
1 cup butter
1 cup vegetable oil
1 egg
* Combine all together, mixing well.
1 tsp vanilla
1 tsp cream of tarter
1 tsp baking soda
3 1/2 cup flour
* Combine together and add to the sugar mixture.
1 cup oatmeal (not cooked)
1 cup coconut
1 cup Rice Krispies
1 cup chocolate chips
* Add to batter and mix well.
Drop by teaspoon onto greased cookie sheet and press with fork. I actually did a bit more than a teaspoon and pressed by hand. I think I would like to follow the directions next time to see the difference, but it worked out well. Bake 8-10 minutes at 350.
