Ingredients

  • 1 Tbsp vegetable oil
  • 4 cloves garlic chopped
  • 2 carrots sliced
  • 5 kaffir lime leaves crushed
  • 1/4 yellow onion sliced
  • 4 chicken breasts cut into bite sizes pieces
  • 1/2 lb white mushrooms sliced
  • 1/4 cup cilantro chopped
  • 1 can coconut milk
  • 3 Tbsp lime from 2-3 limes
  • 1-2 Tbsp Thai red curry paste
  • 3 Tbsp fish sauce

Instructions

  1. Add oil to wok and heat on med-high heat.
  2. Add garlic and saute about one minute.
  3. Add carrots and cook for 2 minutes.
  4. Add onion and cook for 2 minutes.
  5. Add 1/2 can coconut milk and half of lime mixture.
  6. Add chicken and cook until no longer in on the outside.
  7. Add remaining coconut milk and lime mixture.
  8. Cook until chicken is cooked through.
  9. Lime Mixture:
  10. 3 Tbsp lime
  11. 1-2 Tbsp Thai red curry paste
  12. 3 Tbsp fish sauce
  13. Serve over rice or rice noodles.
