Overnight Mashed Potatoes - Ingredients

  • 3 lbs. russet potatoes
  • 1 1/2 cup sour cream
  • 6 Tbsp softened butter divided
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper


How to Make Overnight Mashed Potatoes

  1. Cut potatoes into quarters.
  2. Cook potatoes for about 25 minutes in boiling salted water. You will know they are done when they pierce easily with a fork.
  3. Drain potatoes and put them in a large mixing bowl.
  4. Combine potatoes with sour cream, 4 Tbsp butter, salt and pepper.
  5. Beat the potato mixture until light and fluffy on low speed.
  6. Pile into a 9x13 casserole pan. Cover and refrigerate overnight (I have made mine the same day too).
  7. Bake covered in a preheated 325 degree oven for an hour.
  8. Toss with 2 Tbsp melted butter.
  9. Continue baking uncovered about 30 minutes longer.
