KETO SAUSAGE CHAFFLE BREAKFAST SANDWICH

Ingredients

  • 2 large eggs
  • 1/2 cup shredded mozzarella
  • 1 Tbsp almond flour optional
  • 1 egg
  • 1 slice havarti or muenster cheese
  • 1 sausage patty – The Costco Kirkland brand is the right size
  • 1 tsp butter

Instructions

  • Heat your waffle iron to medium-high.
  • Heat a small pan on the stove to medium high. Cook sausage in a small pan for 9-10 minutes if frozen or 6-7 if thawed, flipping at the halfway mark. Alternatively, microwave according to package directions.
  • While the sausage is cooking, combine the eggs, mozzarella and almond flour in a small bowl.
  • Spray waffle iron with cooking spray.
  • Add mixture to waffle iron and cook through.
  • Once cooked, cut in half. Half will be the bottom, and half will be the top.
  • Cook egg to desired doneness. I like a runny yoke. Instructions to make your yoke runny can be found here.
  • Stack your sandwich. Butter the chaffles. Add the sausage with egg on top of one. Put the cheese on top of the egg and put the other half of the chaffle on top.
