Mint Chocolate Chip Cookies

Ingredients

  • 1 1/2 cups unsalted butter softened to room temperature
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 Tbsp vanilla
  • 1/4 tsp peppermint extract
  • 2 eggs
  • 3 3/4 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp salt1 tsp baking powder
  • 2/3 heaping cup Dove Dark Chocolate & Mint Chocolate Swirl chopped (about 18 pieces)
  • 2/3 cup bittersweet chocolate chips
  • 2/3 cups mint baking chips

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, beat butter, sugars, vanilla, and eggs with the mixer on medium speed or with a spoon until light and fluffy.
  • In a separate bowl, combine flour, baking soda, baking powder, and salt.
  • Combine dry ingredients to wet ingredients and combine completely.
  • Mix in chocolate chips, mint chips, and chopped-up Dove Dark Chocolate and Mint Chocolate Swirl candies.
  • Measure dough using a medium cookie scoop (about 1.5 tablespoons) or roll it into a ball.
  • On a cookie sheet lined with parchment paper or a silicone baking mat, place dough balls 2 inches apart.
  • Bake in your oven for 11 to 13 minutes or until light brown (the center will be soft).
  • Cool for 10 minutes on the pan, and then remove from cookie sheet to cooling rack.
