My Favorite Fluffy Pancake Recipe
These are the best fluffy pancakes on the internet. The vinegar is the secret.
Servings 16 pancakes
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter melted
- Extra butter for cooking.
Combine the milk and vinegar together. Let it rest 5 minutes. This is essentially making buttermilk (never buy buttermilk again!)
Combine dry ingredients in a large bowl.
Whisk egg and butter together with the buttermilk.
Pour the flour mixture into the buttermilk mixture and whisk until smooth.
Heat a large skillet pan over medium heat, and melt a bit butter for cooking. Pour batter onto the skillet (about 1/4 cup), and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
