  • 1 tsp garlic oil
  • 1/2 Tbsp butter
  • 1 tsp garlic
  • 2 Tbsp bacon
  • 2 cups mixed greens
  • 1 tsp sugar
  • 5 cherry tomatoes sliced
  • 3 eggs
  • salt & pepper to taste
  • 2-3 Tbsp goat cheese

Instructions

How to Make a Mixed Greens, Goat Cheese and Bacon Breakfast Scramble

  • Heat a large pan on medium-high heat. Add oil and bring to temperature.
  • Add in butter and garlic and sauté briefly, until garlic starts to brown.
  • Add in bacon and sauté for 30 seconds.
  • Mixed greens and sugar will be added next. Sauté until mixed greens are wilted, 3-5 minutes.
  • Add in cherry tomatoes and cook for one more minute.
  • Scramble eggs and add to vegetable mixture. Cook until done to likeness.
  • Sprinkle with salt and pepper to taste.
  • Remove from heat and sprinkle goat cheese on top.
