Ingredients

  • 1 1/2 lb creamer potatoes
  • 1/8 cup olive oil
  • 1 Tbsp butter
  • 2 Tbsp garlic minced
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp thyme
  • 1/8 tsp cayenne
  • salt and pepper to taste
  • fresh parsley - optional for serving

Instructions

  • Heat oven to 400 degrees
  • Quarter potatoes and add them to a baking dish. Add all ingredients to the pan and stir to combine.
  • Cook for 45 minutes to an hour, stirring once in the middle of cooking.
  • Sprinkle with parsley for serving.
