  • 7 slices bacon
  • 8 eggs
  • 3/4 cup half and half
  • 3 Tbsp butter melted
  • 1/2 tsp onion powder
  • 1/2 tsp dried mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup shredded sharp cheddar
  • 1/2 cup shredded medium cheddar


  • Preheat oven to 350.
  • Heat a heavy cast iron skillet on medium-high heat and cook bacon until done.
  • Place bacon on a paper-towel lined plate to cool slightly and then crumble. Leave a small amount of those nice bacon drippings in the pan.
  • Beat eggs, half and half, butter, onion powder, dried mustard, salt and pepper until light and fluffy.
  • Stir bacon and cheese into the egg mixture.
  • Put mixture in the pan with your bacon grease.
  • Bake for 25-30 minutes. Check in the center with a knife to make sure it comes out clean and is fully cooked.
