The Best Easy Key Lime Pie Recipe

Ingredients

  • 1 1/2 cups graham cracker crumbs 12 full crackers
  • 3 Tbsp sugar
  • 1/4 tsp salt
  • 6 Tbsp 3/4 stick unsalted butter, melted
  • 1 - 14 ounce can of sweetened condensed milk
  • 2/3 cup Key lime juice - Nellie & Joe’s Key lime juice
  • 3 large egg yolks
  • 3 Tbsp sugar
  • 3 Tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1 1/2 cups chilled whipping cream
  • 3 Tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 F. Mix graham cracker crumbs, sugar, and salt in a medium bowl to blend. Add melted butter and stir to coat well. Press crust into a 9-inch diameter glass pie dish. Bake for 5 minutes. Cool completely.
  • Preheat oven to 275 F. Whisk all ingredients in a large bowl until smooth. Pour mixture into cooled crust. Next, bake until the center is set, about 25 minutes. It will be a little wobbly after baking. Refrigerate uncovered until cold, then cover and chill for at least 6 hours or overnight.
  • Using an electric or stand mixer, beat all ingredients in a large bowl until peaks form. Spread atop pie and serve.
