3large egg yolks

3Tbspfresh lemon juice

1 1/2cupschilled whipping cream

Instructions
Preheat oven to 350 F. Mix graham cracker crumbs, sugar, and salt in a medium bowl to blend. Add melted butter and stir to coat well. Press crust into a 9-inch diameter glass pie dish. Bake for 5 minutes. Cool completely.
Preheat oven to 275 F. Whisk all ingredients in a large bowl until smooth. Pour mixture into cooled crust. Next, bake until the center is set, about 25 minutes. It will be a little wobbly after baking. Refrigerate uncovered until cold, then cover and chill for at least 6 hours or overnight.
Using an electric or stand mixer, beat all ingredients in a large bowl until peaks form. Spread atop pie and serve.
