As a mom, we want to get food into our kids that are packed with great health benefits. I have a breakfast option that will give you the satisfaction of helping your kids eat food that are high in fiber, whole grains and protein while making your child feel as though they are eating a dessert. Trust me, your kids aren’t the only ones who will be fooled. I think this healthy key lime pie breakfast parfait will become a favorite for the entire family. I also have to mention that St. Patrick’s Day is coming up, and this would be a great green breakfast treat for that morning.
We love key lime pie around here, and if you ever make my favorite key lime pie recipe you’ll understand why. I even made another adaption to this favorite treat – key lime pie dessert shooters. Today I get to bring you a great recipe that is significantly healthier than the two I just mentioned. This is a breakfast packed with goodness. The Kashi cereal acts as the crust while the greek yogurt becomes the filling. You won’t be disappointed.
I also want to introduce you to the Oats Made Great sweepstakes going on at Albertsons, which is where I bought all of my ingredients. If you make your own Kashi oats into a great recipe, you could win $250 and 6 lucky runners up will receive a $50 gift card. I also invite you to head to the Oats Made Great campaign page to vote for your favorite flavor combinations presented there. I want to show you my yummy breakfast version.
Ingredients to Make Key Lime Pie Breakfast Parfaits
- Kashi Go Lean Crunch! – a naturally sweetened multigrain cluster cereal
- Chobani Greek Yogurt – Simply 100
- Whipped Cream (if you don’t mind a tad bit of sinfulness)
- Raspberries
- Lime (optional for presentation purposes)
The recipe is easy to make. All you do is add layers of cereal and greek yogurt. I made a double batch for the photo, but you can make one batch. I try to keep it at the serving sizes of 3/4 cup Kashi Go Lean Cunch!, 1 container of Chobani Greek Yogurt – Simply 100, and a dollop of whipping cream. If you are being really good, skip that. Add raspberries for more whole food goodness. I kept throwing raspberries into the cup as they were eating away.
With the greek yogurt and Kashi Go Lean Crunch! alone, here are the health benefits:
290 Calories – 21 gram of protein – 13 grams of dietary fiber – 16 grams of whole grains
Wow! That’s a whole lot of goodness packed into a breakfast. The Chobani simply 100 has more than half the sugar of the normal Chobani and yet has no artificial sweeteners, flavors and no preservatives. Go Lean Crunch! is a non-GMO food and is committed to natural ingredients filled with health benefits.
The true test, in our family, is the Kenzie test. My middle daughter is probably one of the pickiest eaters you’ll ever meet, and I’m not kidding. We sneak a lot into smoothies and try to have something nutritious at the table she’ll eat, but there are a lot of meals where she’ll just choose not to eat. I don’t accommodate. I serve what I serve. If Kenzie likes it, we know it’s a hit. I made this for an afternoon snack. There’s no rule saying you need to have it for breakfast only. So what happened with her?
She loved it. I was trying to get my pictures in, and she kept grabbing at it, like you see above. She couldn’t wait to try it, and she ate the whole thing. It passed the Kenzie test in our house. I’m sure it will be embraced the picky eater in yours. These are healthy nutrients in delicious disguise, so enjoy!
