Need to bring an appetizer to an event? This is sure to please. With only four ingredients, it is easy, but it is cheesy goodness. It’s from my mom’s collection of appetizers, and it’s definitely a favorite for our family.
Pastry Wrapped Brie with Pesto and Sun Dried Tomatoes
1 Round of Brie
1 Puff Pastry Sheet (found in the frozen section)
1/8+ cup pesto
1/4 cup sun dried tomatoes in oil
Defrost puff pastry sheet at room temperature for 40 minutes. Once it is more like a dough, roll out slightly larger than found in package. It takes about 4 quick rolls with a rolling pin on a floured surface.
Cut your brie roll in half as shown above. Set one half the the cheese on the pastry (rind side down. Spread the pesto and add the sun dried tomatoes on top. Then, add the second half of the brie cheese on top to sandwich the contents inside. Keep the rind on the outside.
Wrap the pastry around the cheese (as shown above) and then flip it over into a 8x8x2 inch glass pan for baking. The smooth side will be on top.
There’s always excess dough, so I take it out and do designs on the top. We did holly for the top of this one since it was for a Christmas event. You can use any cookie cutter or hand create any design. Maybe create 2013 for a New Year’s Party. You could do someone’s name for a birthday party. Create a bunny for Easter. Whatever you like.
Bake for 30-40 minutes at 325. Serve warm with crackers or toasted baguette rounds.
I remember your mom bringing this one time to my parents’ house for Superbowl Sunday…many years ago 🙂 It was my first taste of Brie I think.

I’ve made this the past several years for New Year’s Eve, except I’ve never tried adding the pesto & sun dried tomatoes. I will have to try it! As a side note, it is very delicious with just the pastry & brie!
And I bake it at 400 for 20 minutes.
