Dr. Seuss and his masterful literature creations are celebrated annually on Dr. Seuss Day. Dr. Seuss Day this year is scheduled for March 2, 2015. Kids will be exploring his literature and celebrating through crafts, reading, activities and food. I wanted to create some adorable Dr. Seuss cupcakes inspired by his whacky creation of Thing 1 and Thing 2.

I wanted to bring you a brief tutorial on how to make these Dr. Seuss cupcakes so you could re-create them on your own. I think you’ll love making these for your kids or classroom.
You always want to start out with a great recipe. I would encourage you to try my favorites: chocolate, white velvet or red velvet. I also have my wonderful best buttercream recipe, but if you are looking for a recipe without whipping cream, I encourage you to try the Trophy Cupcakes recipe. If you love baking, I have to give a shout out to Kitchen Aid and my most used kitchen appliance (other than the obvious), the Kitchen Aid stand mixer.
Once you have your cupcakes are baked and cooled, you are ready to make your cupcake liners. I always have assorted colors of stock paper on hand, and I used the red color for the cupcake liner. I used my free printable of a cupcake liner outline and printed these onto the red stock paper. Then, I cut them out. I found a free Dr. Seuss Thing 1 and Thing 2 printable at obSEUSSed, which I printed out, cut out and then used double stick tape to adhere to the cupcake liners. I put all of the cupcakes into these liners.
So, how do you make the spiky little blue hair for the top of the cupcakes? I used disposable pastry bags for easy clean up. You will need decorating round tip 12. Working from one edge to the other, you will want to squeeze out your frosting until it touches the top of the cupcake. Slowly pull away. End your pressure and pull up to create the Hershey kiss type shape. Continue until the entire cupcake is full.
These whimsical Dr. Seuss cupcakes celebrating the adored characters, Thing 1 and Thing 2, will delight your kids as they celebrate the much loved Dr. Seuss.
