Easy Homemade Whipping Cream
Homemade Whipping Cream is so easy to make, and it far surpasses anything you can buy at the store. It really can make the difference in your favorite dessert recipes. It is also much more stable than your store-bught options.
I’m a recipe-follower by nature, but not with whipping cream. I feel like whipping cream is so easy to make that the ratios don’t need to be perfect. Tasting will help lead you to the depth of sweetness you prefer. That said, I did put together a great recipe for you to follow.
What is in this Whipping Cream Recipe?
Most whipping cream recipes have the same ingredients, but the last food item on this list is what makes mine different with more depth.
- heavy whipping ccream
- sugar
- vanilla
- honey
Honey contains natural invert sugars (glucose and fructose), which help keep whipped cream smooth and prevent it from becoming grainy. Beyond that, honey can provide a bit more stabilization, helping it hold its shape. The flavor adds a rich, floral sweetness that will make your guests ask, “There’s something deliciously different about this whipping cream. What is it?”

How do I know if my Homemade Whipping Cream is the right Texture?
I tend to make my whipping cream with medium-stiff peaks, but what does that really mean?
What are Soft Peaks?
Look: The cream is thickened and smooth, but still a little loose. When lifting the whisk, the peak will fold over rather than stand tall.
Use for: Folding into desserts, topping pancakes or fruit, or making mousse.
Tip: This is the stage where you can still add honey, sugar, or flavorings without deflating it.
What are Medium Peaks?
Look: The cream is fluffier and holds its shape better. Peaks stand up briefly, then curl over slightly at the tip.
Use for: Most desserts — pies, cakes, drinks, etc.
Texture: Smooth, cloud-like, and spreadable without being runny.
What are Stiff Peaks?
Look: The cream is firm and peaks stand straight up when you lift the whisk. It looks glossy, not grainy.
Use for: Piping or when you need the whipped cream to hold up longer (like for layered desserts).
Warning: If you keep whipping beyond this, it can turn grainy and start to separate into butter and buttermilk.

What Should I Do if I Over-Whip My Whipping Cream?
Stop whipping immediately after noticing.
Add 1–2 tablespoons of unwhipped heavy cream, and fold or whisk gently by hand to bring it back together. You should. be able to rescue it if you didn’t over-whip too much.
