I’ve been looking for ways to use all the ripe and ready lemons collected from my backyard over the past couple of weeks, but this family can only drink so much lemonade. We’re also just about sick of lemon pies, lemon teas, and lemon chicken. Couple days ago, while setting out to find a lemon-friendly side dish recipe, I’ve finally found and perfected a delicious recipe for fluffy and flavorful lemon-garlic brown rice. Trust me when I say that you will love this simple and quick side dish recipe.
Lemon-Garlic Brown Rice with Parsley
Ingredients Needed to to Make Lemon-Garlic Brown Rice with Parsley:
- 1 cup uncooked brown rice, soaked
- 2 tablespoons butter
- 2 large cloves garlic, minced
- 1 tablespoon finely grated lemon peel
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1/4 cup water
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh parsley
- 1 tablespoon fresh-squeezed lemon juice
Instructions for Making Lemon-Garlic Brown Rice with Parsley:
- Gather your ingredients
- Combine all ingredients except parsley and lemon juice in a large saucepan
- Bring to boil over high heat, then stir to prevent burning on the bottom
- Adjust heat to low/simmering and cover tightly with lid
- Allow to simmer for 40-50 minutes or until the liquid has been absorbed
- Add in parley, lemon juice and stir to mix
- Remove from heat and let rest for 10 minutes
- Serve and enjoy!

Change it up:
If you’re looking for ways to revamp this recipe, try adding bell peppers or mushrooms! You can also use spices like cayenne pepper to give the rice more of a kick or dial the flavor back by using less lemon juice. Most rice cookers could cook this recipe as well, just mix them up in your rice cooker with less liquid. If you want to make this dish with white rice, just cook it on the stove for 15 minutes rather than 45. Get creative, experiment, and let us know what your favorite combinations are!
Keep your rice fluffy:
If you’re having a hard time getting your brown rice to stay fluffy, try boiling it for 30 minutes and then drain it in a colander. Turn off the stove, pour the drained rice back into the pot quickly, cover it tightly, and let the rice steam for about ten minutes. When you uncover the rice, fluff it with a spoon and it should be perfect! Just be careful with this method because it’s very easy to dump all of your flavor out along with the water.
