Fish Tacos are a favorite around my house. We especially love making them in the spring and summer. It just seems fitting. I buy the frozen mahi mahi at Costco. The great thing about this is that it defrosts in about 10 minutes, so if I have an aioli and pico de gallo all made up, it is a really easy lunch or dinner to throw together. I also buy my tortillas at Costco. I don’t know if you have found their fresh tortillas in the refrigerator section, but I think it’s a best kept secret. They have 5 recognizable ingredients, and you throw them in a pan for a few minutes to heat up the tortilla. They are so much better than any other store bought tortillas I have found. They taste fresh. The recipe below makes an abundant amount of pico de gallo and aioli, so you’ll have enough for leftovers. Here’s the fish taco recipe I made up:
Fish Tacos
4 Mahi Mahi Fillets
1-2 Tbsp Olive Oil
Salt & Pepper to taste
Cabbage Slaw
Fresh Avocado (optional)
Fresh cilantro (optional)
Lemon wedges (optional)
Tortillas

Please see my pico de gallo and aioli recipe to have available for this recipe. You can also buy pre-made pico de gallo to make things easier for you. All you need to do is pan fry the mahi mahi. I heat up olive oil in a pan on medium-high heat. Season both sides of the mahi mahi with salt and pepper. You can squeeze on some lemon too if desired. Put the fish in the pan and heat about 3-4 minutes or until the fish is cooked about 1/4 up on one side. Reduce heat to medium and cook another 4-5 minutes on the other side. When done, let it rest 2 minutes before flaking with a fork. Stack your taco. Kids love this recipe because they can build their own with the elements they like. Here are the options: fish, pico de gallo, aioli, cabbage slaw, avocado (or guacamole), cilantro and lemon. For the fish, you can always throw it on the grill too. It adds a nice charred flavor.
