Who doesn’t love a yummy Rice Krispies® Treat? This Rice Krispies and Marshmallow Ice Cream recipe is both simple and marries two of our favorite desserts. If you love this flavor combination as much as we do, I think you’ll adore this inspired creation.
It is that time of year when I start thinking of summer fun. There are activities and ideas that just scream summer, and anything ice cream is part of that. This ice cream treat should definitely be a part of sweet summer moments.

This idea was not only motivated by flavors we crave, but it was also inspired by a Father’s Day tradition our family has had.
The men in our family LOVE ice cream. We have done ice cream tasting, where everyone brings a unique flavor of ice cream on Father’s Day. We do a blind taste test, guess the flavors and choose our favorite.
One year we decided it would be fun if everyone made their own, unique ice cream flavors. My family brought such fun and whimsical mixes that turned ice cream into a creative experience.
Rice Krispies and Marshmallow Ice Cream
You know the ice cream shops that mix the ice cream on a slab in front of you based on the flavor combinations you choose? That mixing process was what we used to create this fun dessert.
These flavors could have been easily mixed in your bowl as well to save the mess on the table, but my kids had too much fun being able to mix this Rice Krispies Treat Ice Cream recipe on the counter.
After mixed, you could eat it right away or stick it in the freezer to harden it for a bit.
I’m adding a recipe, but you really could just eyeball the mix. Treating the process of making it as enjoyable as eating it only adds to your summer celebration time. It makes it more of a family event.
Rice Krispies and Marshmallow Ice Cream
Ingredients
- 2 cups Vanilla Ice Cream
- 1 cup Mini Marshmallows or Marshmallow Creme
- 1/2 cup Rice Krispies
Instructions
- Note: You can use mini marshmallows or marshmallow creme. I love the roasted flavor of the mini marshmallows, but if you don't want to bother with an oven, the creme is the way to go.
- Set your oven to broil and broil mini marshmallows on high for up to one minute. Watch carefully! Mine were done in 40 seconds.
- Combine all ingredients together using a flat spatula, ice cream scoop or spoon.
- Serve immediately for a softer ice cream or place in the freezer for 15 minutes or longer to harden more.
My daughter couldn’t quite wait to dig into her creation, and it was a big hit. I couldn’t stop eating this stuff.
The bit of a crunch reminded me of fried Mexican ice cream, and the roasted marshmallow addition was fabulous. I hope this dessert helps you to embrace the summer full-kid fashion. I almost guarantee that the completion of summer will not be the end of your enjoyment of this ice cream treat.
