Spinach Salad with Boursin, Candied Pecans and Craisins
This spinach salad with Boursin, candied pecans and Craisins is definitely a go-to salad for me. It is really easy and semi-homemade because the salad dressing is from a bottle. The flavors work so well together. If you throw in some grilled chicken, it becomes a meal. When I make this salad, I don’t generally measure things out. I just eyeball it. I added units of measuring to this post for those who want an exact recipe. However, if you want to make this quickly, just estimate by throwing things together in a bowl. I like to make up a big batch of my homemade candied pecans. The recipe for this salad is “quick and easy,” and it remains convenient when I have a Ziplock bag of these candied pecans in the cupboard when it comes time to make this salad. I have also seen candied nuts in the grocery store if you want to go that route. This can be a simple lunch by cutting the recipe down or can be made up for large crowds on a moment’s notice. I really love Girard’s White Balsamic Vinaigrette dressing, and I know you will be pleased as you try this recipe also.
Spinach Salad with Boursin, Candied Pecans and Craisins (serves 4)
4 Cups Spinach
1 cup Candied Pecans
4 Tbsp Craisins
4 Tbsp crumbled Boursin or Feta
4 Tbsp Girard’s White Balasmic Vinaigrette
Combine all of the ingredients together in a bowl and toss to combine.
