My Favorite Fluffy Pancake Recipe

These are the best fluffy pancakes on the internet. The vinegar is the secret.

Ingredients

  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter melted
  • Extra butter for cooking.

Instructions

  1. Combine the milk and vinegar together. Let it rest 5 minutes. This is essentially making buttermilk (never buy buttermilk again!)
  2. Combine dry ingredients in a large bowl.
  3. Whisk egg and butter together with the buttermilk.
  4. Pour the flour mixture into the buttermilk mixture and whisk until smooth.
  5. Heat a large skillet pan over medium heat, and melt a bit butter for cooking. Pour batter onto the skillet (about 1/4 cup), and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
