  • 1 tsp garlic oil
  • 1/2 Tbsp butter
  • 1 tsp garlic
  • 2 Tbsp bacon
  • 2 cups mixed greens
  • 1 tsp sugar
  • 5 cherry tomatoes sliced
  • 3 eggs
  • salt & pepper to taste
  • 2-3 Tbsp goat cheese

Instructions

How to Make a Mixed Greens, Goat Cheese and Bacon Breakfast Scramble

  1. Heat a large pan on medium-high heat. Add oil and bring to temperature.
  2. Add in butter and garlic and sauté briefly, until garlic starts to brown.
  3. Add in bacon and sauté for 30 seconds.
  4. Mixed greens and sugar will be added next. Sauté until mixed greens are wilted, 3-5 minutes.
  5. Add in cherry tomatoes and cook for one more minute.
  6. Scramble eggs and add to vegetable mixture. Cook until done to likeness.
  7. Sprinkle with salt and pepper to taste.
  8. Remove from heat and sprinkle goat cheese on top.
