Mixed Greens, Goat Cheese and Bacon Breakfast Scramble
For me, breakfast is the hardest meal to get my vegetables. I do love breakfast, but I tend to be carb heavy with the breakfasts I make often and enjoy – like dutch babies, fluffy pancakes, and my all too yummy Monte Cristo breakfast panini.
Today I give you a wonderful recipe with great ingredients that bring both flavor and nutrients to your breakfast meal.
Ingredients Needed to Make Mixed Greens, Goat Cheese and Bacon Breakfast Scramble
- 1 tsp garlic oil
- 1/2 Tbsp butter
- 1 tsp garlic
- 2 Tbsp bacon
- 2 cups mixed greens
- 1 tsp sugar
- 5 cherry tomatoes, sliced
- 3 eggs
- salt & pepper to taste
- 2-3 Tbsp goat cheese
How to Make a Mixed Greens, Goat Cheese and Bacon Breakfast Scramble
- Heat a large pan on medium-high heat. Add oil and bring to temperature.
- Add in butter and garlic and sauté briefly, until garlic starts to brown.
- Add in bacon and sauté for 30 seconds.
- Mixed greens and sugar will be added next. Sauté until mixed greens are wilted, 3-5 minutes.
- Add in cherry tomatoes and cook for one more minute.
- Scramble eggs and add to vegetable mixture. Cook until done to likeness.
- Sprinkle with salt and pepper to taste.
- Remove from heat and sprinkle goat cheese on top.
This Mixed Greens, Goat Cheese and Bacon Breakfast Scramble is still quick to make, but combines some terrific flavors to make eating greens enjoyable. The greens cook down so they don’t overwhelm the dish.
