One of my good friends is having her first baby. The shower was fabulous with a cute brown, pink and white look. I decided that it would be fun to do a Neapolitan Cake. I hope you were able to see the recipe for the chocolate, strawberry and coconut (barely coconut…very mild flavor) cakes. I just stacked those up on the inside and wanted to replicate the design on the outside.
To be honest, a week ago I had no idea what the design for this cake was going to look like. Kenzie woke in the middle of the night (which I’m blessed rarely happens around here), and I had a hard time falling back asleep. I think it was God’s grace that woke me in the middle of the night because it’s when I found the inspiration for this design. In the end, my fondant job was terrible. It was the worst I’d ever done or even seen, but I didn’t have the time or the fondant to do it over. So, I had to make it work. I was so grateful that the design I had in my head covered 90% of the cake with circles. It was able to cover most of my flaws in the fondant. The circles “just happened” to line up perfectly all the way around the cake…each one touching the other with no weird gaps. I really did see it as God’s provision after a harder week around here. Kenzie was busy in her bean area, so she couldn’t help. Abby, however, was able to work with me. It’s amazing what they can do if you start them young. She has become quite the helper – making the job go quicker. It’s fun to witness and exciting to watch her growing up. I didn’t snap many pictures of her helping because I was working with dirty hands and a limited amount of time.

It’s interesting how, when we bake, the flaws are the size of a barnyard door and yet no one else can see them. Your fondant looks spectacular! Is that a buttercream transition between your layers?
Thanks for your kind words. It really would be humbling to show you a picture of the messed up fondant underneath. It’s all about angles. 🙂 It is buttercream between the layers. I want to get more creative with my fillings but haven’t branched out there yet.

I love how this came out! I’ve been thinking about making a neapolitan layer cake lately. It looks so pretty with all the layers after it’s been cut! And the way you decorated this lovely- so modern and clean.
