Are you looking for a Fourth of July dessert that is as yummy as it is beautiful? These Fourth of July mini cakes are both tasty and impressive in presentation. These could also be made this weekend for Memorial Day. I came up with the idea last year when I was planning my daughter’s Fourth of July birthday party. I had made her stars and stripes birthday cake and had leftover cake I wanted to get rid of. I also had friends over for a play date, so I served them these little beauties with all the scraps.

If you love red velvet cake, then this is the cake for you. It is stacked with my red velvet recipe, white velvet cake recipe and favorite buttercream recipe that is enjoyed by all. I was inspired to make these after making my pink ombre mini cakes.
The process is simple. You make a the cakes linked above, and you use a 2″ circle cookie cutter cookie cutter to cut out mini cake circles. One of the most important tips to making these mini cakes successfully is to make sure your cakes are level. They will become super tipsy if not leveled correctly. Here’s a link to my favorite cake level.
Once you have your cake circles cut out, it’s time to layer. I used a large star tip and disposable pastry bags for easy clean up. The layers won’t be seen much, so it doesn’t take a ton of skill to add the frosting. Simply swirl in a circular motion and stack accordingly. The cake is topped off with some beautiful, fresh blueberries.
