There’s just something about a warm, cheesy biscuit that hits the spot, and this bacon cheddar biscuit recipe is one you’ll want to make again and again. They’re soft, buttery, and packed with crispy bacon and delicious cheddar in every bite. Whether you serve them fresh out of the oven for breakfast or alongside dinner, these biscuits disappear fast! I’ve included a video tutorial to help you create your own homemade biscuits.

The Story Behind this Bacon and Cheddar Biscuit Recipe
Every year, we serve on the worship team at Cannon Beach Conference Center. We have been going to Insomnia Coffee there for years, and part of the draw was their baker. She makes the most delicious baked goods, and we have especially been drawn to her biscuits.
We would call in the morning and ask which flavors would be on the menu for the day and rush over if some of our favorites were on the list.
This past year, she opened her own coffee shop in town called Elk Creek Coffee. We had to follow her and her baked goods to her new spot.
Years ago, I asked if she would share her recipe. The answer was no. I figured. She was sweet about it, but I don’t blame her for holding onto her recipes. The only hint I’ve ever received is that you will never make them as good at home because you can’t just get the same oven experience in a home oven as you can in a commercial oven.
One thing I know about commercial ovens is that they are most often on a convection bake.
I have wanted to replicate her biscuits, and I have tried over and over again to find the perfect method and base recipe to make it happen. We always travel with the same group of friends, so I have had my own set of honest tasters along the way.
After many fails, I think I am as close as I’m going to get, so I’m ready to share one of the recipes I’ve created. More combinations to come.

Tips and Tricks for Making Homemade Biscuits
As I have experimented and researched, I have discovered or found great advice for baking biscuits. I want to share some of them with you today.
- Butter Tips: Freeze your butter. If you are hand mixing your dough, grate your frozen butter. If you are using a food processor, cube your butter before sticking it into the freezer for at least 30 minutes, but ideally for a couple of hours. The small chunks of cold butter melt during baking, creating steam that makes biscuits rise and separate beautifully.
- Baking Tips: Bake on convection at a higher temperature. These are baked at 425.
- Keep Things Cold: Work quickly so everything stays cold. Beyond the frozen butter, you can even put the flour in the refrigerator if the room temperature is warm.
- Mixing – Don’t overmix your dough. You want to mix it until it just comes together in a shaggy mess. A few floury streaks are totally fine before rolling or patting out.
- Folding and Pressing – Press your dough into shape, cut into thirds, and then stack and press again. Repeat this process to get great layers (instructions in recipe).
- Buttermilk: I have found that buttermilk creates the most tasty biscuits. I make my own by using the ratio of adding 1 Tbsp in a measuring cup and adding milk to the 1 cup level. Wait five minutes and boom – buttermilk. Note: for this recipe, we are working with 3/4 cup.
- Cutting: Try and press straight down and straight back up when cutting so as not to seal the edges, which helps give a beautiful, flaky rise.


Bacon and Cheddar Biscuits
Ingredients
- 2 cups all purpose flour spooned in measuring cup and leveled
- 3 Tbsp corn starch
- 1/2 tsp baking soda
- 1 Tbsp baking powder
- 1 Tbsp sugar
- 1 tsp salt
- 1/2 tsp garlic powder
- 2 tsp oregano
- 10 Tbsp salted butter cut into 1/2 inch chunks and frozen
- 3/4 cup buttermilk see notes
- 1 cup shredded cheddar sharp or medium depending on preference
- 1/2 lb bacon cut into bits
Instructions
- Heat oven to 425 °F convection bake and position rack to the middle position.
- Take 1/2 lb bacon and cut it into 1/2 inch chunks. Cook on the stovetop until done. Drain on paper towel and allow to cool.
- If making your own buttermilk, do that now. See notes.
- In food processor fitted with the blade attachment, combine 2 cups of flour, 3 Tbsp cornstarch, 1/2 tsp baking soda, 1 Tbsp baking powder, 1 Tbsp sugar, 1 tsp salt, 1/2 tsp garlic powder, and 2 tsp oregano. Pulse a few times to mix completely.
- Add the 10 Tbsp frozen butter and pulse until coarse. The mixture should look like coarse crumbs. Don't overmix. If mixing in a bowl rather than a food processor, grate frozen butter into the flour mixture and stir to combine.
- Transfer the mixture to a mixing bowl and stir in 1 cup shredded cheddar cheese, and 1/2 lb cooked and crumbled bacon. Add buttermilk and stir just until the dough comes together. It should look like a shaggy ball. Again, don't overmix. If it looks too dry, you can add a bit more buttermilk, milk, or heavy cream.
- Lightly flour a surface, and turn the dough onto the counter. Pat the dough together into a ball and then shape it into a rectangle about 1 inch thick.
- Using a sharp knife or pastry cutter, cut the rectangle into thirds. Stack the dough rectangles one on top of the other and then press them into a 1" thick rectangle (see video tutorial for help).
- Lightly flour the surface again. Repeat the process above, cutting it into thirds, stacking, and then pressing. This time, press it into a square about 3/4" thick. I square off my edges using a pastry cutter.
- Using a sharp knife or pastry cutter, cut the square into 9 each parts, 3×3.
- Transfer each biscuit to a baking sheet prepared with parchment paper or a silicone baking mat, and bake for 12-14 minutes. Biscuits will be golden brown on the top.
- These biscuits are best enjoyed immediately, but I reheat mine by tearing them in half and heating them at 360°F in the air fryer for a few minutes.
