We love guacamole around here. We went to a restaurant in Puerto Vallarta, Mexico that had a line out the door. We had gone on this trip for our baby moon. One of the coolest things is that they would come to the table and make their guacamole table side. It was a simple combination of ingredients, like the ones listed below, and it was to die for. My husband put a few recipes together to find, what we think, is the perfect combination. This stuff disappears, so if you are having guests over, you might want to make a lot. We add this to our Mahi Mahi fish tacos and our Fajitas. We also just eat it with tacos or chips.
Guacamole
3 avocados
1/3 red onion
1/2 cup cilantro
1/2 tsp salt
2 cloves minced garlic
juice of one lime
Mash avocados and combine all ingredients together.
