This Thanksgiving Leftovers Breakfast Casserole was inspired by my father-in-law on Thanksgiving Day. He began talking about leftovers, and we started to imagine what breakfast options there might be using the tasty food sitting around us. While we imagined breakfast sandwich and scrambled egg options, my thoughts were drawn to my make ahead Christmas casserole, which is a favorite in my circles. An idea was born, and I just had to try out my new creation.
While I made this breakfast casserole the morning after Thanksgiving, I am sure it can be a make-ahead breakfast option. My other Christmas casserole is an overnight option and since it’s the same idea with different ingredients, I’m declaring this as an overnight option as well.
Thanksgiving Leftovers Breakfast Casserole
2 bagels
1 1/2 cup leftover stuffing
1 cup leftover turkey
10 eggs
1/4 cup milk
1/2 tsp salt
1/4 tsp pepper
2 cups shredded cheddar cheese
1/2 heaping cup gravy
How to Make Thanksgiving Leftovers Breakfast Casserole
- Heat oven to 350 degrees.
- Cut bagel, stuffing and turkey into bite sized pieces. Add these ingredients to a 9×13 inch casserole dish.
- In a mixing bowl add eggs, milk, salt and pepper. Whisk. Pour this over the ingredients in the 9×13 casserole dish.
- Add cheddar cheese evenly to the top of the casserole.
- Spread the gravy to the top of the casserole.
- Bake on 350 for 45 minutes.
We had a number of taste testers the morning after Thanksgiving since we were on vacation together in a house by the ocean. Everyone that tried it took seconds, so I would say that is a success. I will want to make it every year, which is another indication that this was a win.
