Bruna Kakor Swedish Cookies
You might be wondering how Bruna Kakor cookies even came on my radar. It’s an obscure cookie in America, and everyone in our lives who has tried them since I began making them has never heard of them. That said, they are about to become well-known in my circles because people are asking for the recipe.
We were exposed to this delicious yet simple Swedish cookie on our recent anniversary trip to Leavenworth in Washington state. If you are unfamiliar with Leavenworth, it’s a Bavarian-style village in the Cascade Mountains. When you step into Leavenworth, you feel like you have stepped into a European village. It’s a blessing to have this treasure in our state.
It was a big anniversary…20 years, so we treated ourselves to the Posthotel and spa, which is a next-level experience. Want to spend the entire day in a robe? This is the place to go.
In the evening, special evening bites are served…again, while you visit the dining room in your robe. One of the evenings had some ridiculously good cookies that I had never had before. We played games in the lobby…in our robes…and kept going back to these cookies to grab more. We couldn’t help ourselves.
I asked the staff if I could get the recipe. While they wouldn’t give me their recipe, they did give me the name of the magical cookie: Bruna Kakor.
When I arrived home, I had to find a recipe. Found it. Baked it. Then I tweaked it a bit. I thought I remembered a tad bit of saltiness, which I didn’t find on the recipes online. I also know the hotel put some Turbinado (sanding) sugar on the top, so I added that to my recipe. The results were wonderful.
They may not be the prettiest cookies you have ever seen, but they might be the most addictive.
This is a no-egg cookie recipe, which might be helpful for some with dietary restrictions.
What do Bruna Kakor Swedish Cookies Taste Like?
Bruna Kakor cookies are a mix between a sugar cookie and a shortbread cookie, but my son said, “These taste like a really good homemade graham cracker.” I see where he is coming from. I think it is the honey in these cookies, however, there is no molasses, so this cookie is more subtle.
The cookie has both a chewy and crispy nature to it, which gives it a really great texture. My kids go back and forth as to whether they like the crispier edges or the softer center. I think it is a great mixture.
These are the best cookies to serve with tea or coffee. They just pair well with these drinks.

Freezing Bruna Kakor Cookies
These probably won’t last, but if you do want to stick these in the freezer, you absolutely can. After completely cooled, add them to an airtight container or bag. Freeze for up to 3-4 months. These can be defrosted at room temperature before serving.
Bruna Kakor Swedish Cookies
Ingredients
- 1 cup butter
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 1 Tbsp honey
- 1 Tbsp corn syrup
- 1 Tbsp turbinado sugar
Instructions
- Preheat oven to 350. Prepare two cookie sheets. These can be ungreased, non-stick pans or pans fitted with parchment paper or a silicone mat.
- In a stand mixer fitted with a paddle attachment, combine room-temperature butter and sugar until light and fluffy.
- Add the flour, baking soda, salt, vanilla, honey, and corn syrup. Mix until fully combined.
- Divide the dough into four equal parts.
- Dough will be rolled out to 11″ x 2″ x 3/8″. Do this directly on the cookie sheet. There will be two rectangles per sheet, about 3 inches apart. I like to make it into a bit of a snake with my hands and roll it from there. This does not need to be a perfect rectangle. The dough spreads as it bakes, so you will never end up with perfectly square cookies.
- Sprinkle 1/4 Tbsp of turbinado on top of each log.
- Bake for 15-16 minutes until golden brown.
- Cool for a few minutes and then use a cookie cutter to cut the cookies. I do one long cut down the center (long way), and then do 1″ strips all the way down.
