OK – So, I’m getting these out too late for this Thanksgiving, but you’ll have to pin or save the recipe for next year. It’s definitely a favorite for me during this season. It’s similar to a pumpkin pie, but I definitely prefer it. My husband was excited to know I’d be making these bars for Thanksgiving this year. I hope you enjoy them as much was we do.
Yummy Pumpkin Bars
2 cups flour
1/2 cup brown sugar
1 cup butter – room temperature
Mix the flour, sugar and butter until crumbly. Press into a 9×13 pan. Bake 20 minutes at 350.
1 15 oz can pumpkin
1 can evaporated milk
2 eggs
3/4 cup sugar
1 tsp cinnamon
1/2 tsp. ginger
1/4 tsp cloves
1/2 tsp salt
Mix above ingredients together. Pour into baked crust and bake at 350 for 40 minutes or until filling is set.
