My son loves meatballs, but we also received news that he would need to be on a low-FODMAP diet. I decided to modify a number of his favorites, and these Homemade and Easy Low-FODMAP and Gluten-Free Freezer Meatballs became one option to satisfy his tastes.
My goal, when starting this diet, was to have convenient options available when my child was hungry. I considered myself Costco one day as I sat making bucketloads of things I could stick in the freezer. Tons of these meatballs were made that day. I also spent time making these low-FODMAP and gluten-free chicken nuggets. It was so nice to have a couple options to make quickly at dinner time.
These meatballs are great alone, but I also love this low-FODMAP pasta sauce. Pair these with some gluten-free pasta

Homemade and Easy Low-FODMAP and Gluten-Free Freezer Meatballs – Ingredients

2 lbs ground beef
2 large eggs
1/2 cup parmesan cheese
3/4 cup low fodmap approved, gluten free breadcrumbs (homemade or store bought)
1/3 cup lactose free milk
2 Tbsp tomato paste
1 tsp salt
1 tsp pepper
1 Tbsp dried basil
1 tsp dried oregano
1 Tbsp chopped chives
1 Tbsp garlic olive oil, you can make this homemade or buy it already made.
Homemade and Easy Low-FODMAP and Gluten-Free Freezer Meatballs – Directions

Combine all ingredients in a large bowl, mix well with hands or spoon.

Shape into 1 1/2″ balls and place on a greased baking sheet.

Bake at 375 degrees for 25-30 minutes or until brown.
Freezer Instructions: Let baked meatballs cool completely and place in a freezer safe zip lock bag. When ready to eat, thaw in refrigerator and microwave for 1 minute or until hot.
