This Peanut Butter Pie recipe I inherited from my mom. I don’t know where it originated, but for the peanut butter lover, this is the way to go. It’s not a challenging pie, and you only need to bake the crust. No more words needed. Let’s jump to the recipe.
Peanut Butter Pie
1 8 oz package cream cheese, room temperature
1 cup sugar
2 tsp vanilla
2/3 cups peanut butter
8 oz container Cool Whip
22 Oreo cookies
1/3 cup butter, melted
* Note: If using a spring form pan, use 32 Oreos and 1/2 cup butter, melted.
Crust
Note: I made a chocolate crust, but you can also make a graham cracker crust. I love the crust on my Key Lime Pie.
Crush Oreos to a fine consistency. I do mine in a food processor. Add the melted butter and mix completely Put in a pie plate and bake at 350 for 6-8 minutes. Cool completely before adding filling.
Filling
Combine cream cheese, sugar and vanilla until completely mixed together. Add peanut butter and mix thoroughly. Add Cool Whip and combine completely. Add entire mixture to cooled crust. I had way too much mixture for my crust. A solution is to do this recipe in a spring form pan like my Marvelous Mud Pie. You could just eat spoonfuls of it like I have been doing too. He he he. I actually came up with an idea of something extra yummy to do with the extra filling, so stay tuned tomorrow. Refrigerate for an hour or more before serving. I drizzled some Hershey syrup over the top for lack of time. However, if you do have the time you could do a proper chocolate drizzle. There’s a good description of how to do this at Got Chocolate.
I’m always going to encourage you to get your kids helping. Bonding happens around food, and there is so much learning and exploring to do. Once they are trained well, they can actually be very helpful.
This is what the crust looks like once it is pressed into the pie plate.
You’ll want to fill it as shown above. You will have extra filling unless you are doing a spring form pan. Again, tune in tomorrow for what to do with the leftover filling.
I was in a hurry to get to our friend’s house this day, so I just did a Hershey drizzle. Careful with how much you do. I ended up going a little overboard and it started to grow bigger on the edges.
