These Chocolate Chip and Heath Cookie Bars Made from Box Cake were born out of the need for a quick, last minute dessert. I was headed off to an event recently, and an hour before, I remembered I had to make a dessert. Looking through the pantry, I realized I had to get creative.
We had a half used bag of Heath bits and a half used bag of chocolate chips. Theoretically, I could have made these amazing cookies. However, running short on time, I wanted something even easier. I noticed I had a white box cake also.
Now bar cookies made from a box cake are something I had heard about before but never made. I decided to give it a go. It was a win. In fact, the next event I went to, I also made this dessert.
These cookie bars were so easy to make, and they disappeared when served. These definitely are making their way into my regular easy dessert rotation, which also includes my easy 4 ingredient Bisquick berry cobbler and my 2 ingredient elephant ears.
Ingredients for Chocolate Chip and Heath Cookie Bars Made from Box Cake
- One White Box Cake (I used Krusteaz)
- 5 Tbsp butter, melted
- 2 eggs
- 1 egg yolk
- 1 1/2 tsp vanilla
- 6 oz Heath Bits
- 6 oz Semi Sweet Chocolate Chips
How to Make Chocolate Chip and Heath Cookie Bars Made from Box Cake
- Preheat oven to 350.
- Grease a 9×13 pan.
- Combine cake mix, melted butter, eggs, egg yolk and vanilla in a mixing bowl.
- Add Heath Bits and chocolate chips and hand stir to combine completely.
- Spread out evenly in the 9×12 pan.
- Bake 30-35 minutes or until a toothpick comes out clean. It will puff up and then fall flatter as it cools.
