Cooking for More?
If you want to stretch this recipe, you of course can always double it. However, here are some ways I’ve found to serve more:
- This is a thicker and more hearty soup. To lighten it up or make it go further, add chicken broth. If you add broth, you will also want to add some more seasoning to taste.
- Add more hamburger or even ground sausage to the recipe.
- Dump in another can of your favorite ingredient just to add more of the things your family loves.
Busy Nights
As kids get older, life gets more full. Homework, after school and church activities tend to dominate the afternoons and evenings.
Hopefully, you are working in time to rest and play. I know that can be neglected, but it so important for the health of your kids and your family.
The Imp0rtance of Eating Together
It has been proven beneficial for children to eat meals with their families. The Atlantic states, “Children who do not eat dinner with their parents at least twice a week also were 40 percent more likely to be overweight compared to those who do, as outlined in a research presentation given at the European Congress on Obesity in Bulgaria this May. On the contrary, children who do eat dinner with their parents five or more days a week have less trouble with drugs and alcohol, eat healthier, show better academic performance, and report being closer with their parents than children who eat dinner with their parents less often, according to a study conducted by the National Center on Addiction and Substance Abuse at Columbia University.”
This in no way is meant to be a guilt trip. Rather it is an encouragement to carve out the time to sit and eat together.
With this Easy and Inexpensive Mexican Dump Soup Recipe, I am helping provide a food option that is doable for busy families. It’s also a great soup recipe for those who simply don’t enjoy spending all their time in the kitchen.
This Mexican soup is made in 20 minutes. Most of that time is spent heating things up. Prep time is minimal.
This flavorful soup is hearty and tasty. I hope it becomes a great go-to recipe in your home.
