If you are looking for a flavorful yet simple side dish, this is it. These roasted red potatoes only take minutes to prepare, especially if you use pre-chopped garlic. That said, I think fresh garlic always tends to have more flavor. Using a hand chopper does make the preparation process quicker.
The rustic, hearty flavor profile is especially nice in the fall and winter, but these potatoes can really be enjoyed year-round.

Yes. I would do the lighter amount of olive oil. Toss them well. Put 1 lb at a time in the air fryer basket, and air fry on 400 for 10-12 minutes.
