Looking for a new recipe for those super ripe bananas? These glazed banana strawberry muffin tops were an instant hit with my family and friends.
While I generally use our ripe bananas for our favorite banana bread, I was in the mood for some culinary creativity. This muffin top recipe was the result.
Glazed Banana Strawberry Muffin Tops
Confession: I didn’t set out to make muffin tops. We adore scones, and I’ve created a variety of option including my lemon, pumpkin spice, egg nog and cinnamon sour cream varieties.
As I stared at my ripe bananas I considered what to attempt. Muffins? Cookies? Bread? Pancakes? Scones? Are banana scones a thing? Why not try. Further, I opened my refrigerator and saw a bunch of strawberries that desperately needed using.
Banana and strawberries are a perfect marriage, so I had it. Banana and strawberry scones was the solution, so I began to adapt my scone recipe for these ingredients.
I added a tad more flour than usual, but I didn’t want to dry them out too much. I knew the strawberries and bananas would be adding more moisture, but as I scanned some other banana scone recipes, they had less flour than mine, so I decided to let it ride with just 1/4 cup more.
As I was doing the final steps of the recipe, it became immediately clear that my batter was too moist. It wouldn’t form a nice circle like normal. Rather than making the circle and cutting wedges, I plopped them on the baking sheet in dollops, curious what the results would hold.
Upon tasting, it was clear that just upping the flour a bit wasn’t a solution because the texture wasn’t that of a scone. I had an amazing muffin texture, but a scone my creation was not.

The glazed banana strawberry muffin tops were born out of my failed scone attempt. Everyone loved them.
Kramer was definitely onto something with the muffin top idea. It’s the best part of the muffin. I’m thinking I might need to try and do my blueberry muffin recipe just as a muffin top as well.
Glazed Banana Strawberry Muffin Tops – Makes 32
- 3 1/4 cups flour
- 1/2 cup sugar plus more for sprinkling tops
- 4 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup butter, frozen and grated
- 1 egg
- 1 cup Milk
- 1/2 Tbsp white vinegar
- 2 ripe bananas, smashed
- 1 heaping cup strawberries, diced
INGREDIENTS NEEDED FOR VANILLA GLAZE
- 1 cup powdered Sugar
- 2 Tbsp butter, melted and cooled slightly
- 2 Tbsp milk
- 1 tsp vanilla
How to Make Glazed Banana Strawberry Muffin Tops
- Move rack to bottom position and preheat oven to 400 degrees.
- In a large bowl, combine flour, sugar, baking soda, baking powder and salt.
- Grate frozen butter and cut in with a pastry blender.
- Put 1/2 Tbsp vinegar in a measuring cup and add milk until 1/2 cup. Stir and let rest for 5 minutes (this is making buttermilk). After 5 minutes, add another 1/2 cup milk.
- Whisk together milk and egg.
- Mash bananas.
- Add milk & egg mixture and mashed bananas into the flour mixture, and combine with pastry blender.
- Stir in diced strawberries with a fork until incorporated.
- Using a cookie scoop, scoop mixture onto a parchment lined cookie sheet, positioning 1 inch apart.
- Sprinkle each banana strawberry muffin top with a bit of sugar.
- Bake until golden, about 12 to 14 minutes. Cool.
- To make glaze, rapidly whisk together powdered sugar, butter, vanilla and milk. Allow to cool slightly, whisking periodically.
- Using a whisk, drizzle glaze onto cooled scones.
Muffin tops might just need to be the trend I jump on next in baking. Delight your own family and guests with this tasty breakfast (or anytime) pastry.
