Spicy Bacon Avocado and Tomato Breakfast Sandwich
My sister and I have committed to a once a month game day. We love games, and we love each other. What else do we love? Food.
We take turns hosting and the host provides the food.
I was hosting this month, but my sister had a request: breakfast.
Perfect. Breakfast is the best. However, that could mean any variety of things. Did she want to go sweet like dutch babies, crepes, blueberry muffins or was she thinking more savory like a delicious breakfast scramble, egg and cheese Stromboli or even a Swiss and bacon quiche? Maybe she wanted a combination of both.
I asked. She said, “I’m thinking a good breakfast sandwich with a runny egg. To me the secret seems to be in the sauce. Something like a basil aïoli or chipotle mayo or something like that. Surprise me.”
That got my creativity flowing. I love a good breakfast sandwich recipe, and it doesn’t take too much to make an ordinary breakfast sandwich into something special. She’s right. The secret is in the sauce.
Ingredients Needed to Make 4 Spicy Bacon Avocado and Tomato Breakfast Sandwiches
- 4 eggs
- 8 slices of bacon
- 1 avocado
- 1 tomato
- salt and pepper to taste
- 4 sandwich rolls – I chose a a ciabatta roll, but you could use a bagel, bread, croissant or English muffin
- 2 Tbsp butter
- 1 Tbsp cream cheese
- 1 Tbsp sour cream
- 1 Tbsp mayo
- 1/2 Tbsp grated parmesan
- 1/4-1/2 tsp cayenne (depending on spice tolerance)
- 1/4 tsp garlic powder
How to Make a Spicy Bacon Avocado and Tomato Breakfast Sandwich
- Make your spicy cream sauce by stirring together cream cheese, sour cream, mayo, grated parmesan, cayenne, and garlic powder until fully combined.
- Cook up bacon, and set aside.
- Eggs will be cooked in the bacon grease. Yum! How long you cook it depends on your egg doneness preference. We love a runny egg, but others would flee from that idea. Make it a runny sunny side up egg by cooking covered on medium low head for 2 to 2 1/2 minutes. We chose to do over easy by flipping it to brown slightly on the top side too. Cook longer if you don’t want your yoke to break.
- While bacon and eggs are cooking you can spread butter on the bread and toast. I like to lay mine on a griddle to get that buttery, toasty goodness.
- It’s time to layer that sandwiches. Spread about a tablespoon of your spicy cream sauce on the bottom layer of the bread. Add tomatoes, avocado, egg, salt and pepper to taste and top it off with bacon. Don’t forget the top of your bread, unless you are reducing your carbohydrates and eating it open-faced with a fork and knife.
Time to dig in, and you’re going to love it from the first bite until the last. Make up a bunch of the sauce so that it’s easy to re-create day after day.
