These roasted breakfast creamer potatoes are especially tasty with an egg scramble, but they really would accompany so many different meals.

These breakfast roasted potatoes can be added to the breakfast foods we love. They are the perfect breakfast side.
These potatoes pack a bit of a kick. If spicy isn’t your thing, simply reduce the amount of cayenne or leave it out completely. For me, I enjoy the flavor provided with the extra heat.
I love me some breakfast for dinner. I imagine I’m not alone. The other night I sautéed some mushrooms and cherry tomatoes. I tossed those with scrambled eggs and sausage. These roasted creamer potatoes were the perfect side.
Roasted Breakfast Creamer Potatoes – Ingredients
1 1/2 lb creamer potatoes
1/8 cup olive oil
1 Tbsp butter
2 Tbsp garlic, minced
1/2 tsp onion powder
1/4 tsp paprika
1/4 tsp thyme
1/8 tsp cayenne
salt and pepper to taste
fresh parsley – optional for serving
How to Make Roasted Breakfast Creamer Potatoes
- Heat oven to 400 degrees
- Quarter potatoes and add them to a baking dish. I love my stoneware for roasted potatoes.
- Add all ingredients to the pan and stir to combine.
- Cook for 45 minutes to an hour, stirring once in the middle of cooking.
- Sprinkle with parsley for serving.

Can These Roasted Breakfast Creamer Potatoes Be Served for Dinner?
Yes!
While I call these a roasted “breakfast” potato, they could really accompany so many dinner meals also. Baked chicken dijon is one of our favorites. These potatoes would also be amazing alongside my 30 minute charbroiled chicken legs.
What are Creamer Potatoes?
Creamer potatoes are small potatoes that are harvested before they are mature. The result is that they are tender and have a smooth texture.
Creamer potatoes are either Yukon potatoes or red potatoes. I purchase a mixed bag at Costco.
With the big Keto trend, people are hesitant with potatoes. Don’t be scared of these beauties. Creamer potatoes provide your body with potassium, Vitamin C and fiber. All in moderation is my motto.
